super simple summer salad

it is crazy-busy around here,

packing for our move and securing hay to feed our herd through the coming winter.

it’s mostly exciting but also exhausting,

made all the more so by the fact that my chef is in oregon visiting his kids and grandkids.

i’ve never hidden the fact that at this stage of my life i no longer cook,

although i am happy to bake when it is not 90+ degrees.

(which is has been pretty much daily for THE LAST THREE MONTHS.)

fortunately my hubby is one dandy chef, if i do say so myself.

not only is he extremely resourceful and creative in the kitchen,

but he likes it.  (right, dear?)

so, as i find myself missing both him and his culinary talents on yet another scorching hot summer day,

i am posting one of his recipes before summer is just a memory.

so, without further ado, here is


Prep work:  Saute cubed boneless chicken pieces in olive oil with a little hit of garlic and some herbs de provence.

“we” actually like to make up a batch of this and keep some on hand to toss into whatever we might cook up…

Then:  grab a LARGE bowl and start assembling the following ingredients

•  mixed greens, including fresh spinach

•  an avocado, cubed

•  sliced tomato

•  red bell pepper

•  snap peas

•  carrot slivers

•  green apple slices

•  dried cranberries

•  cold beets

•  walnut pieces

•  cooked chicken

•  whole grain croutons

•  shaved parmesan

•  sprinkle liberally with poppy seed dressing

grab two forks, pour two glasses of chilled chardonnay or rose’,

and find someone who would love to sit outside and enjoy

this sweet, savory, crunchy meal with you.

trust me, there will be takers.

    i’m a fan of salads.
    like you, i am not a cook.
    salads, however: easy to pick/wash/toss/add.

    LOVE that smoochy snoot at the end of the post.

      i think i got burned out on cooking. did it for the family for so many years that it simply is. not. fun., except on occasion.
      baking? love to bake. bread, rolls, cookies, sourdough– fun!
      but now i’m ready for my chef to return!

    Mmm….fresh hay….
    You have so many horses you are starting to EAT like one! HA HA!
    Salad sounds scrumptious.

      ha ha!! grazin’ in the grass!
      getting more bales of hay this weekend, and then hopefully we’re done!
